| 2 15-ounce cans black eyed peas, drained | 1/4-1/2 cup fat-free Italian salad dressing |
| 1 green bell pepper, finely chopped | 1-2 Tablespoons fresh Jalapeno pepper (to taste) |
| 1 red bell pepper, finely chopped | 1/4 cup green onion, thinly sliced |
| 1-2 Tablespoons minced garlic (to taste) | 1 bunch fresh cilantro, washed, patted dry, finely cut (leaves only) |
| Juice squeezed from 1 fresh lime |
