Crab Appetizer

8 ounces Neufchatel (low-fat cream cheese), room temperature

1 7-1/2 ounce can crab meat (reserve 1 Tablespoon)

2 Tablespoons green onion, finely chopped

1 cup seafood cocktail sauce

  1. Drain and rinse crab using colander or mesh strainer.
  2. Mix onion, cheese and crab thoroughly. Spread evenly over serving plate (8-9 inch diameter).
  3. Pour cocktail sauce over cheese mixture. Sprinkle reserved crab over cocktail sauce.
  4. Serve with low-fat crackers.
