All Bran Muffins

2 cups boiling water

2 cups 100% Bran

3 cups All Bran

  1. Combine and set aside to cool.
1 cup shortening 1 cup All Bran
2-1/2 cups honey 5 cups flour
4 eggs 1 teaspoon salt
1 quart buttermilk 5 teaspoons baking soda
  1. Cream shortening and honey. Add eggs and beat. Stir in buttermilk and the bran mixture. Add the additional All Bran, flour, salt and soda.
  2. Raisins and dates (either or both) can be added.
  3. Fill greased muffin tin 2/3 full.
  4. Bake 20 minutes at 375°.
  5. Batter will keep in refrigerator up to 8 weeks.
