Lemon Angel Cake

12 egg whites 1 Tablespoon grated lemon rind
1 teaspoon cream of tartar 3 Tablespoons fresh lemon juice
1/4 teaspoon salt 1/4 teaspoon vanilla
1-1/4 cups sifted powdered sugar, divided 1 cup cake flour
  1. Beat first 3 ingredients at high speed with an electric mixer until foamy.
  2. Add 3/4 cup powdered sugar, 1 Tablespoon at a time, beat until stiff peaks form.
  3. Fold in lemon rind, lemon juice, and vanilla.
  4. Combine remaining 1/2 cup powdered sugar and cake flour; gradually fold into egg white mixture. Spoon batter into a 10-inch tube pan.
  5. Bake at 375° for 35-40 minutes or until golden. Invert pan on a wire rack. Cool completely.
