Lemon Berry Pie

1 3-ounce package lemon gelatin 2 teaspoons lemon rind, grated
1 cup boiling water 2 cups fresh strawberries, sliced
1 cup lemon sherbet 8 ounces fat-free whipped topping (such as Cool Whip)
4 Tablespoons fresh lemon juice 1 reduced-fat graham cracker pie crust
  1. Dissolve gelatin in boiling water until all crystals are dissolved.
  2. Add sherbet and mix well until melted. Whisk in whipped topping, lemon juice and lemon rind. Fold in strawberries.
  3. Turn in to pie shell. Chill for at least 4 hours.
