Soy Pastry Crust

3/4 cup defatted soy flour 1/4 cup soy margarine
1/4 cup unbleached white flour 1 Tablespoon vinegar
1/2 teaspoon sugar 3 Tablespoons cold water
  1. In mixing bowl, stir together flours and sugar. Cut in margarine until it resembles coarse crumbs. Whisking dry ingredients with a fork, gradually add vinegar and water to moisten. Mixture will look crumbly.
  2. Turn out mixture on a piece of plastic wrap. Push together into flat round. It will be slightly sticky. Top with second sheet of plastic wrap. Roll out to an 11-1/2-inch circle. Remove plastic wrap from top of rolled crust. Invert and place plastic side up in pie tin. Remove plastic wrap. Crimp edges.
  3. For a baked shell, preheat oven to 400°. Prick dough with fork, line shell with foil and fill with pie weights (dried beans or rice will do). Bake 10 minutes. Remove foil and continue baking 8-10 minutes until golden.
