Summer Fruit Soup

1 cup white grape juice

1 cup apple juice

1 teaspoon vanilla

1/4 teaspoon cinnamon

2 teaspoons fresh lemon juice

4 large peaches

1 pint raspberries

  1. Bring grape and apple juice, vanilla and cinnamon to a boil. Simmer 2 minutes.
  2. Blanche peaches to remove skins. Chop 3 and place in food processor.
  3. Add cooled fruit juice mixture and lemon juice. Process until smooth.
  4. Slice remaining peach into thin wedges. Place in bowl, cover with peach purée. Refrigerate until well chilled, 1-2 hours.
  5. Serve topped with raspberries.
