Cranapple Walnut Cake

Source: Adapted from a recipe in Moosewood Cookbook, 1977
1-3/4 cup light brown sugar 1/2 teaspoon nutmeg
1/4 cup canola oil 1 teaspoon salt
1/4 cup unsweetened applesauce 1/2 cup liquid egg substitute
2 cups flour (can use 1/2 whole-wheat pastry flour) 1 teaspoon vanilla
1 teaspoon baking soda 2 cups sliced cooking apples
1 teaspoon cinnamon 1/2 pound fresh, whole raw cranberries
  1. Cream together oil and sugar. Add egg substitute, applesauce and vanilla and beat well.
  2. Sift together the flour and dry ingredients. Add to the first mixture and stir until thoroughly combined.
  3. Stir in apples and cranberries.
  4. Bake in a 9"x13" pan prepared with non-stick spray, 45-50 minutes at 350°.
