| 1-3/4 cup light brown sugar | 1/2 teaspoon nutmeg |
| 1/4 cup canola oil | 1 teaspoon salt |
| 1/4 cup unsweetened applesauce | 1/2 cup liquid egg substitute |
| 2 cups flour (can use 1/2 whole-wheat pastry flour) | 1 teaspoon vanilla |
| 1 teaspoon baking soda | 2 cups sliced cooking apples |
| 1 teaspoon cinnamon | 1/2 pound fresh, whole raw cranberries |
