Chicken Macaroni Salad–Modified **

4 cups macaroni, cooked 1 cup raisins
8 ounces chicken breast halves without skin 1/2 cup nonfat cheddar cheese, cubed
1 cup nonfat mayonnaise 1 Tablespoon sugar
8 ounces maraschino cherries 4 Tablespoons pineapple juice
8 ounces pickle relish 1/8 teaspoon salt
24 ounces pineapple chunks 1/8 teaspoon pepper
  1. Boil the chicken breast with salt and pepper. Shred when cool.
  2. Boil the raisins in water in microwave. Cook the macaroni according to package directions, then drain.
  3. In a large bowl, mix all ingredients well. Chill before serving

** This recipe can be made healthier by using less chicken and cheese (nonfat variety). Nonfat mayonnaise is an easy substitute to lower the fat content of the dressing. Add fiber by increasing the amount of pineapple.
