Chicken Packets

20 ounces chicken breast, boned skinned and cut into 1-inch pieces 2 ounces thin slices pepperoni

1 cup onion, sliced

1 teaspoon each dried basil and oregano leaves 2 cups cherry tomatoes, halved
1 teaspoon garlic powder 1 green pepper, sliced
1/2 teaspoon each salt and pepper 4 small zucchini cut into 1-inch pieces
8 teaspoons olive oil 1 cup mozzarella cheese, shredded
  1/2 cup grated Parmesan cheese
  1. Make 8 large squares of heavy-duty aluminum foil.
  2. Place 2-1/2 ounces of chicken in each square.
  3. Combine oregano, basil, garlic powder, salt and pepper. Sprinkle chicken with mixture.
  4. Evenly distribute pepperoni, tomatoes, onion, green pepper and zucchini over chicken.
  5. Drizzle each packet with 1 teaspoon olive oil.
  6. Bring corners of foil together. Close open edges loosely. Place on baking sheet.
  7. Bake at 400° for 30 minutes until chicken is no longer pink and vegetables are crisp tender.
  8. Open each packet carefully. Sprinkle with equal amount of cheese (1 Tablespoon mozzarella and 1/2 Tablespoon Parmesan on each). Place in oven for a few minutes to melt cheese.
