Fried Chicken (Philippine Style)

2 pounds chicken legs and wings 1/8 teaspoon pepper
3-4 cloves garlic, minced 1 teaspoon wine vinegar
5 black peppercorns, minced 1 teaspoon lemon juice
3-5 bay leaves 2 Tablespoons soy sauce
1/4 teaspoon salt 1 cup skim milk
  2 Tablespoons butter
  1. In a large ziploc bag or shallow dish, place all ingredients, but butter. Allow to marinate for 4-5 hours.
  2. Place marinated ingredients in a large frying pan, bring to a boil, cover and allow to simmer covered until tender.
  3. Add the butter and stir until desired amount of pan juice is left, or take off some of the pan juice, add the butter and stir-fry.
  4. Serve with rice or potato dumplings. Can fry the dumplings with the chicken, if desired.
