Fried Green Beans (Philippine Dish)–Modified **

6 ounces ground turkey * 1 Tablespoon low-sodium soy sauce
1 pound green beans, cleaned and cut in small pieces 1/8 teaspoon salt
3 cloves garlic, minced 1/4 teaspoon black pepper
1 small onion, thinly sliced 2 teaspoons sesame oil
  Optional: Add 1/4 cup water
  1. Add oil to a nonstick wok or skillet over high heat. Add the garlic and stir-fry until you can smell the aroma, then add the onion and ground turkey. Cook until turkey is browned.
  2. Add green beans, soy sauce, salt and pepper. Cook until green beans are still crisp or until well done, your preference.
  3. Serve with rice.
Note: Can substitute okra or cabbage for green beans. Do not use water when using okra.

* When using commercially ground turkey, the nutrition facts should indicate 2 grams of fat or less per ounce. If you grind your own turkey or have the butcher grind it for you, use skinless turkey breast.

** Substituting ground turkey breast (and using slightly less meat) in Eva’s traditional recipe can lower the fat content. Try sautéing vegetables in less oil. The use of low-sodium soy sauce and cutting the amount of salt reduces sodium intake.
