Low-Fat Chicken Enchiladas

1 package fat-free tortillas

1 Tablespoon margarine

1 10-3/4 ounce can fat-free
condensed cream of chicken soup
1/2 cup onion, chopped 1-1/2 cup chicken breast (skinless), cooked and cubed *
1 clove garlic, minced

1 4-ounce can diced green chilies, drained

1 cup reduced-fat shredded cheddar cheese

1/4 cup skim milk

1/2 cup nonfat sour cream

* May substitute turkey breast for chicken

  1. Remove tortillas from refrigerator; set aside.
  2. Heat oven to 350°.
  3. In nonstick skillet, melt margarine. Cook onion and garlic until tender. Stir in green chilies, sour cream and soup; mix well. Reserve 3/4 cup sauce. Set aside.
  4. Stir in chicken and 1/2 cup cheese to remaining sauce in skillet.
  5. Warm tortillas according to package directions.
  6. Fill tortillas with chicken mixture; roll up. Place seam side down in ungreased 12"x8" baking dish.
  7. In small bowl, combine reserved sauce and milk. Spoon over rolled tortillas. Top with remaining 1/2 cup cheese.
  8. Bake for 30-35 minutes or until bubbly.
