Marinated Salmon

12 ounces salmon steak 2 oranges, separated into sections
1/4 cup orange juice 3 green onions finely chopped
2 chopped tomatoes 1 Tablespoon minced fresh mint (optional)
  1 teaspoon olive oil
  1. Marinate salmon in orange juice for 30 minutes.
  2. Combine oranges, tomatoes, onions and mint and set aside at room temperature.
  3. Sauté the salmon in the olive oil, in a nonstick pan, until brown on both sides (3-5 minutes each side).
  4. Remove to serving platter. Spoon the fruit/vegetable mixture over fish.
