Oriental Turkey Stir Fry

1 pound fresh turkey breast, skinless Sauce:
1 bunch (1 pound) bok choy 1 cup chicken broth, low sodium
1 8-ounce can water chestnuts 1/4 cup soy sauce, low sodium
1 cup (2 ounces) fresh mushrooms 2 Tablespoon dry sherry
3 green onions 2 Tablespoon cornstarch
1 Tablespoon oil 1/4 teaspoon garlic powder
  1/4 teaspoon ground ginger
  1. Cut turkey breast slices into 1/4-inch strips.
  2. Slice bok choy, water chestnuts, mushrooms and onions.
  3. Heat oil in nonstick wok on medium high for 2-3 minutes.
  4. Add turkey. Stir-fry 3-5 minutes until turkey turns white and begins to brown, remove to plate.
  5. Add vegetables to wok. Stir fry 4-5 minutes.
  6. Combine sauce ingredients. Pour over vegetables. Add turkey.
  7. Heat and stir 2-3 minutes more until sauce is thickened.
  8. Serve over rice or chow mein noodles.
