Quick Beef Stroganoff

1 pound sirloin steak, trimmed of fat 1 medium onion, thinly sliced
1 teaspoon paprika 1/2 pound fresh mushrooms, sliced
1/4 teaspoon salt 3/4 cup fat-free beef broth
1/4 teaspoon black pepper 2 Tablespoons nonfat sour cream
  Vegetable oil spray
  1. Cut beef across grain, on the diagonal, into thin strips. Season with salt, pepper and paprika. Spray a large nonstick skillet with vegetable oil spray. Add beef and cook over medium high heat, turning often until brown, about 3-5 minutes. Quickly remove beef with tongs.
  2. Add onion and mushrooms to skillet. Cook on medium heat, stirring frequently until lightly brown and soft, about 5 minutes.
  3. Add beef broth to skillet. Simmer 5 minutes. Return beef to skillet, add sour cream and cook until just heated through. Do not let sauce boil.
  4. Serve over noodles.
