Quick Country Supper

1 pound low-fat Polish Kielbasa, sliced

4-6 potatoes, diced

4 carrots, sliced

1 medium onion, diced

1 8-ounce can mushrooms (optional)

  1. Cut up ingredients into 4-quart or larger saucepan. Use the liquid from the mushrooms or add a little water to the pan. Cover and cook over low heat until vegetables are tender. Stir occasionally.
