Salmon With Scallions

1 pound salmon fillet

1 teaspoon olive oil

1/4 cup lime juice

1/4 cup lemon juice

3 cloves garlic, minced

2 Tablespoons minced fresh parsley

1/4 teaspoon hot pepper sauce

1/2 cup minced scallions

2 large tomatoes, thinly sliced

  1. In a large nonstick frying pan over medium high heat, sauté the salmon in the oil for 4-5 minutes on each side. Handle the fish gently to keep the pieces whole.
  2. Add the lime juice, lemon juice, garlic, parsley and hot pepper sauce to the pan. Cook for about 3 minutes.
  3. Transfer the salmon to a large platter. Pour the pan juices over the fish. Cover and refrigerate until chilled.
  4. Serve sprinkled with scallions and topped with the tomatoes.
