Spinach Lasagna

1 package spaghetti sauce mix 1 pound cottage cheese
1 6-ounce can tomato paste 1/2 cup Parmesan cheese
1 6-ounce can tomato sauce 2 eggs, beaten
2 cups water 1/2 pound lasagna noodles
10 ounces frozen spinach 1/2 pound mozzarella cheese, grated
  1. Combine spaghetti sauce mix, tomato paste, tomato sauce and water in a saucepan. Simmer for 20 minutes or until thickened
  2. Thaw spinach and squeeze dry.
  3. Combine spinach, cottage cheese, 1/4-1/2 cup Parmesan cheese and eggs. Set aside.
  4. Cover bottom of greased 9"x13" baking pan with 1/2 of the tomato sauce mixture. Layer 1/2 of the uncooked noodles, 1/2 of the cheese and spinach mixture and 1/2 of the mozzarella cheese. Repeat layers. Sprinkle top with remaining Parmesan cheese.
  5. Cover and bake at 350° for 1 hour.
