Spinach Lasagna–Modified **

1 packet spaghetti sauce mix 16 ounces nonfat cottage cheese
6 ounces tomato paste 1/2 cup nonfat Parmesan cheese
6 ounces tomato sauce 8 ounces lasagna noodles
2 cups water 8 ounces nonfat mozzarella cheese, grated
10 ounces spinach 1/2 cup egg substitute
  1. Combine spaghetti sauce mix, tomato paste, tomato sauce and water in a saucepan. Simmer for 20 minutes or until thickened.
  2. Thaw spinach and squeeze dry.
  3. Combine spinach, cottage cheese, 1/4 cup Parmesan cheese and egg substitute. Set aside.
  4. Cover bottom of greased 9"x13" baking pan with 1/2 tomato sauce mixture. Layer 1/2 of the uncooked noodles, 1/2 of cheese and spinach mixture and 1/2 mozzarella cheese. Repeat layers. Sprinkle top with remaining Parmesan cheese.
  5. Cover and bake at 350° for 1 hour.
