Veggie Melt

1 medium tomato, thinly sliced 2 Tablespoon fat-free Italian dressing
1/2 cup shredded carrot 2 ounces fat-free mozzarella, shredded
3 Tablespoon green onion, chopped 2 English muffins
  1/4 cup alfalfa sprouts
  1. Combine first 4 ingredients and set aside.
  2. Sprinkle cheese over muffin halves. Broil 6 inches from heat source with the oven door ajar for 1 minute or until cheese melts.
  3. Top each muffin evenly with vegetable mixture and sprouts.
