Chicken Chow Mein

1 cup celery, chopped 1 can bean sprouts, drained
1 medium onion, chopped 2 teaspoons sugar
2 Tablespoons canola oil 2 cups chicken cooked, shredded
4 Tablespoons low-sodium soy sauce (may add more at the table) 2 Tablespoons cornstarch

1 cup cold water

1 cup chicken broth, (skim fat from broth) 2 cups rice, cooked
  1. Heat oil in pan and stir-fry the celery and onions 2-3 minutes. Add soy sauce, sugar and broth; bring to a boil. Add sprouts and chicken. Mix.
  2. Simmer 10 minutes. Mix cornstarch and water; add to the vegetables and chicken to thicken. Simmer.
  3. Serve over rice.
