Cauliflower Salad–Modified **

1 head cauliflower

1/4 cup chopped stuffed green olives

1/4 cup chopped ripe olives

1 medium onion, chopped

1 green pepper, chopped

2/3 cup fat-free Italian dressing

  1. Cut cauliflower into bite size pieces
  2. Toss with remaining ingredients.
  3. Pour dressing over all ingredients and allow to chill for several hours.

** Make it easy on yourself and lower the fat content of the original recipe–use bottled nonfat Italian dressing and decrease the amount of olives.
