Apple Kabob Salad

1 medium green bell pepper, cut into 12 squares 12 1-inch cubes pineapple, (about 1 cup)
6 cauliflowerets (about 1 cup) 1 cooking apple, cut into 12 wedges
6 radishes
  1. Thread ingredients alternately onto each of six 10-inch skewers.
  2. Serve with poppy seed dressing (recipe follows).

Poppy Seed Dressing for Apple Kabob Salad

1/4 cup non-fat sour cream 2 Tablespoons fresh lemon juice
1/4 cup non-fat mayonnaise 1 Tablespoon Dijon mustard
1/4 cup egg substitute 1 teaspoon honey
2 Tablespoons poppy seeds 1/2 teaspoon salt
  1. Mix all ingredients with fork or wire whisk in glass bowl.
  2. Cover and refrigerate at least 1 hour until chilled.
