Gingered Bulgur Salad With Grapes

1/2 cup bulgur * 1/2 cup packed fresh cilantro leaves
3/4 teaspoon salt 1 garlic clove
2/3 cup boiling-hot water 1 teaspoon grated peeled fresh gingerroot
1/2 cup seedless green grapes 2 Tablespoons fresh lemon juice
  1-1/2 Tablespoons olive oil

* available at natural foods stores and most supermarkets

  1. In a bowl stir together bulgur and salt. Stir in water and let stand, covered, 30 minutes.
  2. While bulgur is standing, slice grapes and chop cilantro. Mince garlic. In small bowl combine grapes, cilantro, garlic, gingerroot, lemon juice, and oil.
  3. Fluff bulgur with a fork and stir in grape mixture.
