Hearty White Bean and Pasta Soup

Adult Bone Marrow Transplant Unit

2 teaspoons olive oil 3 cups chicken broth
1 cup chopped onion 3/4 cup crushed canned tomatoes
3 cloves garlic 3 ounces pasta
1/2 cup chopped red bell pepper 12 ounces cooked, drained white beans
1/4 teaspoon oregano 1-1/2 ounces Parmesan cheese
  1. In pan, heat oil, add onion and garlic. Cook on medium until softened. Stir in oregano and pepper. Cook 5 minutes more.
  2. Stir in broth, 1-1/2 cups water and tomatoes. Bring to a boil, simmer 5 minutes.
  3. Bring mixture back to a boil. Stir in pasta. Cook 10 minutes; add beans and heat through.
  4. Sprinkle with cheese when you serve.
