Zucchini Dish

4 (small) zucchini, sliced

1 onion, sliced

1 clove garlic, chopped

1-2 Tablespoons olive oil

1 can stewed tomatoes, chopped

1 green/red pepper, chopped (optional)

1/2 cup couscous

1/2 cup skimmed mozzarella cheese, shredded

  1. Sauté zucchini, onion and garlic in olive oil. Add tomatoes and simmer 10 minutes.
  2. Add couscous, top with cheese. Cover and remove from heat.
  3. Let stand 5 minutes and serve.
