Potato Dumplings

4 cups potatoes, cooked and mashed * 1 teaspoon salt
2/3 cup regular Cream of Wheat 1 cup flour (heaping)
2 medium eggs 1 Tablespoon parsley
  Dash of pepper
  1. Mix all ingredients in a large bowl to make into a dough. Form into small balls, 2-3 inches in diameter and press firmly.
  2. Drop into boiling salted water for 10-13 minutes or until the dumpling floats.
  3. Serve with gravy.
* Mash potatoes while hot, let cool before measuring.
