Caramels
From the recipe collection of Nancy
1/4 cup evaporated milk
1 tsp. all-purpose flour
2 Tbsp. butter
1/2 cup brown rice syrup
1/2 tsp. vanilla
1/2 cup pistachios, chopped (optional)
Mix evaporated milk, flour, and salt in small heavy saucepan. Add and
mix in butter and brown rice syrup. Heat, stirring constantly, until
mixture reaches 2580 F or until syrup, when dripped in cold water, forms a
firm ball (about 15 minutes). Add vanilla and nuts; pour into small
buttered loaf pan. Cool. Cut into squares and wrap in waxed paper.
