Cranberry Compote
From the recipe collection of Jeni
1 cup homemade dried cranberries
zest and juice of 1/2 lemon
1/4 cup Scotch whiskey
1/2 cup water
1/2 cup vermouth
3 – 4 cloves
1 cinnamon stick
1 star anise
2 Tbsp. dextrose
1 pint fresh cranberries
sugar substitute to taste
Soak dried cranberries with zest and juice of lemon and Scotch whiskey. Setaside. Mix
remaining ingredients in saucepan. Bring to a boil and boil 5 minutes. Add
cranberry/whiskey mixture and simmer until most of the liquid is absorbed,
about 5 minutes. Cool slightly and add Equal or other sugar substitute
to taste, about 3 tsp.
