Egg Casserole
From the recipe collection of Luella
Yield:  6 servings
 
3 Tbsp. butter
2 Tbsp. bread flour
1/2 tsp. dry mustard
1/4 tsp. celery salt
1 1/4 cup milk
1/2 tsp. salt
1/2 tsp. pepper
6 hard-boiled eggs
2 cups crushed potato chips
 
Melt butter in small pan.  Stir in dry ingredients to make a roux:; slowly add milk and stir to make a smooth white sauce.  Layer half the chips in bottom of small greased casserole; cover evenly with eggs and white sauce.  Cover top with remaining chips.  Bake in moderate oven for 20 minutes.
