Italian or Spanish Sausage

2 1/2 lbs. ground pork
2/3 cup grated Parmesan cheese
1/2 cup fresh parsley
1/4 cup dry white wine
1 clove garlic, minced
1/2 tsp. red pepper, minced (optional)
1/2 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
or – for a more Spanish flavor; omit cheese and hot pepper and
add 1/2 tsp. each: thyme, sage, mace, and allspice.
Mix above and use as patties, on pizza, in crepes, and on tortillas.
