Almost Lemon Meringue Pie
From the recipe collection of Brenda
 
1/4 of  8 - oz package of cream cheese, softened
1/4 cup Crisco
1/2 tsp. salt
1 cup flour
1 Tbsp. cold water
Cut shortening and cream cheese into flour and salt.  Add water and mix to form a ball.  Refrigerate one hour.  Roll dough between wax paper.  Remove bottom paper from crust and place in pie plate.  Bake at 350oF for approximately 12 minutes or until lightly browned.  Cool completely.
 
Filling:
1 - 3 oz. package No Sugar Added Lemon flavored Jell-O
1 - 3 oz. package No Sugar Added vanilla Jell-O Instant Pudding
2 Tbsp. lemon juice
Lemon zest from one lemon
Remainder of 8 - oz. cream cheese
2 Tbsp. dextrose
With mixer, blend ingredients until smooth.  Pour ingredients into cooled pie crust.
 
Meringue:
4 egg whites (at room temperature)
1/4 cup dextrose
1 tsp. vanilla extract
Beat egg whites until soft peaks form.  Gradually add dextrose, beating until stiff peaks form.  Do not over beat.  Pour onto pie filling and lightly brown in 450oF oven, about 3 – 4 minutes.
