Peanut Butter Cookies
From the recipe collection of Trudy
 
3/4 c (generous) natural peanut butter
1/2 c + 2 Tbsp. butter-flavored shortening
1 cup dextrose
1/2 cup (generous) brown rice syrup
1/4 cup milk
1 Tbsp. vanilla
1 egg
1 3/4 cup flour
3/4 tsp. each salt and soda
 
Mix first six ingredients together. Beat with electric mixer for 30 seconds.  Add egg; beat until well mixed.  Add remaining ingredients; beat on high 1 min.  Roll to walnut sized balls.  Place on ungreased cookie sheet.  Crisscross top with fork to flatten slightly.  Bake 3750 10-14 minutes.  Remove to rack to cool.  Store covered.
