Plain muffins
From the recipe collection of Nancy
 
2 1/2 cups all-purpose flour, sifted
2 eggs, slightly beaten
1 cup milk
2 tsp. baking powder
1/2 tsp. salt
3 Tbsp. butter, melted
2 tsp. vanilla
4 Tbsp. + 2 tsp. dextrose
 
Sift flour; measure and add baking powder, salt and sugar.  Sift again.  Beateggs.  Combine with milk and vanilla.  Pour into flour mixture.  Add melted butter.  Stir only enough to blend ingredients together.  Batter should appear slightly lumpy.  Drop by spoonful into greased muffin tins, filling tin 2/3 full.  Bake at 400o F for 20 – 25 minutes.  Remove from tins.  Serve warm.
